Dulse Mayonaise to have with a 'Salad Tiede' of prawns and hot smoked salmon – alternatively you could eat it with crab or smoked trout.
This is mayo in high heels, with its little purple flecks. We love the fact that the dulse mayonnaise came out a bit speckled.
1/2 mustard powder
1tsp lemon juice
230ml/8fl oz olive oil
3 tbsp Dulse
Place the eggs in a food processor.
Add the salt, pepper, mustard and lemon juice.
Set the food processor on a low setting and add the oil in a steady stream until it thickens.
Add the Dulse for a pink pepper effect.
