Dulse Mayonnaise

Create this delicious seaweed inspired condiment, perfect alongside a prawn salad.

Try this homemade flavoured mayo with a 'Salad Tiede' of prawns and hot smoked salmon, or other Scottish seafood delicacies such as crab or smoked trout. The pretty purple Dulse flecks make any dish extra appealing. 


  • 3 tbsp Dulse
  • 2 eggs
  • 230ml olive oil
  • 1/2 tsp mustard powder
  • 1tsp lemon juice


  1. Place the eggs in a food processor.
  2. Add the salt, pepper, mustard and lemon juice.
  3. Set the food processor on a low setting and add the oil in a steady stream until it thickens.
  4. Once thick, swirl through the Dulse for effect and flavour.
