Try this homemade flavoured mayo with a 'Salad Tiede' of prawns and hot smoked salmon, or other Scottish seafood delicacies such as crab or smoked trout. The pretty purple Dulse flecks make any dish extra appealing.
- 3 tbsp Dulse
- 2 eggs
- 230ml olive oil
- 1/2 tsp mustard powder
- 1tsp lemon juice
- Place the eggs in a food processor.
- Add the salt, pepper, mustard and lemon juice.
- Set the food processor on a low setting and add the oil in a steady stream until it thickens.
- Once thick, swirl through the Dulse for effect and flavour.
