Lime and Chilli Salmon with Mara Seaweed Kombu

"Crispy salmon skin, soft and flaking salmon with a zingy mix of noodles and peppers. This plate takes less than 20 mins to put together but tastes AMAZING! If you need a healthy dish that will have everyone asking for more…save this one for later!
I used a good few tbsp of Lucy's Dressings wonderful Lime & Chilli Asian Dressing to flavour the sliced peppers and carrots as I stir fried them. I tossed the veg together with cooked udon noodles. I pan fried the wild Alaskan salmon, skin down for about 7 mins, and 1 min on the other side before letting it rest for a few mins on a warm plate. Finished with another splash of the Asian dressing and a sprinkle of umami boosting British kombu from @mara_seaweed across the top of the salmon.

We recommend adding Kombu to your salmon to give it that extra kick of flavour!
