Mackerel, Fennel and Orange Salad with Mara Seaweed Kombu

"Smoked mackerel is a favourite of mine but this is the first time I’ve paired it with orange and fennel.
This is a @iamginodacampo recipe, the dressing is made with 3 tbsp olive oil, 2tbsp red wine vinegar (@aspallvinegar of course) and 1 tbsp honey.
The salad has fennel, red onion, chicory and is topped with pine nuts, parsley and orange segments. Fruit and fish? Sounds crazy but citrus and fish is a natural combo, and the sweetness of the oranges works really well with the smoky, oily mackerel.
I gave the whole salad an umami boost by sprinkling @mara_seaweed kombu flakes through the dressing. Yum!"
We recommend adding Kombu to your salad to give it that extra kick of flavour!
