Winter Warming Parsnip, Apple & Dulse Soup

Serves 2 as a main meal or 4 as a starter

Ingredients
1 tbsp Olive Oil
15g Butter
1 Onion
1 garlic clove, crushed
500g Parsnips
2 Apples
1 Mara Kombu Kelp Strips
1 Tin cannellini beans, drained
1 Vegetable stock cube
500ml water
1 tbsp Mara dulse flakes
Salt & Pepper to taste
To make this a spiced Parsnip & Apple soup with a gentle spicy kick, why not add some Furikake at the very end.
Method
Finely dice the onion and sweat in a large pan with the olive oil and butter until very soft but little to no colour. Add the crushed garlic and fry for a couple of minutes.
Peel and roughly chop the parsnip and apples, add to the pan and cook for 5 minutes.
Drain the beans and add to the pan with the stock, water and kombu strips. Boil for 20 minutes or until the parsnips are soft.
Remove the kombu kelp strip and discard, it will have infused its salty umami deliciousness to the dish during this time.
Carefully, using an electric blender, blend the soup until creamy and smooth.
Taste the soup for seasonings, adjust as needed and add the dulse flakes to finish,
